Grand Marnier Ice Cream with Chocolate Truffles

Ingredients:
3/4 cup sugar, granulated
1/4 cup water
7 egg yolks
1 cup heavy cream
1/8 cup Grand Marnier
6 each Chocolate Truffles

Directions:

  1. Cook the sugar and the water in a small heavy saucepan without stirring until the syrup reaches a soft ball stage (238 degrees).
  2. Put the egg yolks in a food processor or blender while adding the hot syrup in a thin stream. Cool mixture. When cooled, process again for two minutes.
  3. In a separate bowl, beat cream until soft peaks form. Fold in mixture and the Grand Marnier.
  4. Freeze for 8 hours.

Chocolate Truffles

Chocolate Truffles Ingredients:
3 ounces semi-sweet chocolate chips
1/4 cup heavy cream
2 tablespoons butter
1 Grand Marnier

Chocolate Truffles Directions:

  1. Melt the chocolate in a bowl over hot water.
  2. Bring cream to a boiling point. Remove from stove and stir in butter.
  3. Stir the cream and butter into the melted chocolate until smooth. Stir in Grand Marnier.
  4. Refrigerate until firm. Shape mixture into balls.
